Brief introduction: Dr. Gustav Mahunu is an Associate Professor and Head of the Department of Food Science and Technology at the University for Development Studies in Ghana. He is also the Co Chief Researcher of the School of Research and Innovation. He obtained a PhD. in Food Science and Engineering from Jiangsu University in China in 2016. Dr. Gustav Mahunu has long been dedicated to postharvest technology, physiology, food processing and preservation, food safety and quality control, comprehensive utilization of agricultural by-products, and development of local food in Ghana. Dr. Gustav Mahunu has published over 50 SCI papers and 1 monograph and has led multiple international collaborative projects. Dr. Gustav Mahunu is a member of professional associations such as the World Food Preservation Center (WFPC), the Ghana Association of Food Scientists and Technologists (GhAFoST), the Global African Academic Doctoral Organization, the African Society for Food Science and Technology, the Ghana Association for Science, and the Ghana Society of Horticulturists (GhIH). Research expertise: Dr. Gustav Mahunu has long been dedicated to post harvest technology, physiology, food processing and preservation, food safety and quality control, comprehensive utilization of agricultural by-products, and development of local food in Ghana.
