Introduction of the main speaker:
Prof. Lin is working in the Department of Nutritional Sciences at Oklahoma State University. He is the final review expert of the National Institutes of Health, the editorial board member and reviewer of several SCI international journals. Professor Lin focuses on research of food bioactive components, nutritional metabolism, and the impact of intestinal flora on health. He has published more than 70 papers and submitted more than 80 papers to academic conferences.

Carotenoids are a common class of lipid soluble nutrients. Its content is negatively correlated with human health, and patients with metabolic diseases generally have low levels of carotenoids in their bodies. So, eating foods rich in carotenoids becomes the most likely healthy choice. This lecture discusses the research progress on the health effects and mechanisms of carotenoid rich foods.
