Food science and nutrition, functional food science, natural product chemistry.
1. Doctoral research direction
Study on the correlation between the health effects and the changes of nutrient components in food/agricultural products during physical processing; Key technologies of high value of agricultural products and their by-products; Active components, biological activity and molecular mechanism of medicinal and edible plants.
2. Graduate research direction
Study on the extraction technology and the function evaluation of active components in medicinal edible plants; Development and utilization of high value-added products from agricultural products and their by-products; Nutrition and safety of food and agricultural products during physical processing.
